Protein Packed Egg Muffins

  • 5 large eggs
  • 1/4 lb cooked ham, diced
  • 1 cup shredded cheese
  • 1 cup diced tomato
  • 1/4 cup spinach, shredded
  • Salt and fresh cracked pepper, to taste
Note: This recipe is super easy to switch things out depending upon what’s in your fridge. Feel free to get creative with your veggies, meat and spices! Other ideas like peppers, broccoli, red pepper flakes, turkey breast, Italian seasoning, etc. would be great switch outs! 

DIRECTIONS

1. Preheat your oven to 400°F (200°C). Grease a muffin pan with oil or non-stick cooking spray. Set aside. In a large mixing bowl, crack in eggs and whisk together with salt and pepper.
2. Stir in your veggies, meat, cheese and spices of choice. Divide evenly into muffin cups filling each about 2/3 full. 
3. Bake in preheated oven for 12-15 minutes, or until set. Cool and eat immediately or store and reheat for the perfect meal prepped snack.
